Okay, so I slipped off the meal plan wagon. Seriously, I haven’t planned since October. I have just been flying by the seat of my stretchy pants! It has not been good on the tummy or the wallet. We still have been eating at home MOST nights, but the meals have not been nearly as good as we had been eating. They also have not been very frugal, because going into the grocery store without a plan tends to cost me much more.
So this is me, trying to climb my tuchus back up on the wagon!
I have used a number of different methods in the past, and I do tend to like theme days, because it simplifies things for me a bit. I do a lot of crock pot meals and a lot of soups/stews, because we are busy, they are fast, easy, and usually leave us with leftovers. I love leftover nights! I will say this week there are no leftover nights, because the kids are home for break and will be eating them for lunch. If leftovers are not your thing, this can at least give you a couple nights of good meals.
Oh and! Not every one of the meals is ultra healthy. I believe that everything in moderation is key. Except grizzly bears, just one of those will kill you!
I do however like to “health up” some meals by substituting. For instance, I like to use ground turkey for ground beef or turkey sausage/bacon instead of pork, and Greek yogurt instead of sour cream. BUT I know that is not for everyone, so do what you want with that.
I am going to start SLOW.

These are enormous and so good! I suggest using a small pan if you want them to cook in a timely manner.
I swear, I am going to attach a shopping list to my menu someday. It would really make things easier, but that day is just not today! Maybe when I get done taking all my Christmas decorations down. You know…around March. 😂
